Cicken Tikka Recipe

Chicken Tikka

What you need:
 3 tablespoonfuls olive oil
 Handful of shallots
 Small slice  fresh ginger
 Half a dozen cloves of garlic, chopped
 1 or two medium red chillis, chopped fine
 Half a jar of tikka masala paste (Patak’s)
 200 ml water
 500 gr filleted chicken, diced
 200 gr chopped tomatoes
 150 ml Greek yoghurt
 1/3 cup fresh coriander, chopped
 2 50g sachets creamed coconut or half a can of liquid coconut
 Sea salt, black pepper

What you do:
 Heat oil in wok
 Add shallots and fry until soft
 Add ginger, garlic, paste and cook high flame 1-2 mins
 Add 50 ml water and cook until evaporated
 Add chicken and chilli, and cook until sealed
 Add tomatoes, 150ml water, coriander and  simmer 15 mins until chicken is cooked
 Add yoghurt and/or coconut and cook for 4 mins
 Season  sea salt & black pepper to taste
 add coriander to garnish
 Serve with steamed rice and/or naan bread

I must say that I have personally sampled this delicious dish - cooked up from scratch by Jimmy.

I just HAD to get him to share that recipe.   TIKKAJIMMY CHICKEN  (Rolls  off nicely on the tongue, doesn't it?) or ... could be CHICKATIKKAJIM.  Actually, yes, I think that one sounds nice - easier to remember too.

MMM-HMMMMM .... Yum!  My only one complaint was that somehow I managed to end up with a mouthful of ginger.  Yuuuukkkkkk (I love what it does to flavour dishes - but as for chewing the thing .... NOOOOOOOOOOO!!!!!   Jimmy was gleeful at my plight - couldn't hide his enjoyment in my suffering ...... UNTIL ............  he managed to cop the other bit in this mouth.  HAHAHAHAHAHA  .... Different story then.   floorlaugh 

But apart from that, it was a really yum-yum dish.  He also made a unique Thai vegetable dish to accompany it (or was it Indonesian? )  Was absolutely delicious anyway.   I love you
